Introduction: Food safety and quality are essential for public health and are linked to meeting the Sustainable Development Goals (SDGs) under the “One Health” approach. The “One Health” approach is crucial to meet the UN 2030 Agenda and SDGs, especially those related to hunger eradication (SDG 2), innovation in agriculture (SDG 9), food waste reduction (SDG 12) and climate action (SDG 13). Objective: To analyze the relationship between food safety and food quality. FAO promotes smart and sustainable agricultural practices, risk monitoring and early warning systems to reduce the environmental impact of agricultural production. Conclusions: Coordination between international agencies such as FAO and WHO is essential to establish and maintain food safety standards along the entire production chain, from primary production to consumption, thus ensuring safe, nutritious and quality food for a growing world population.
